Vegan meals made in under 20 minutes
Our ‘Quick Vegan’ series are short, sharp pieces that get to the point. You’re a busy person who needs to eat, so check out our simple recipes that get from screen to stomach in 20m or less.
This is hands down the worlds easiest recipes and makes for a really filling and healthy breakfast, just prepare the night before. There are only 6 ingredients for the basic recipe but are unlimited if you want to add more flavour, and it’s a one pot wonder so only a spoon to wash up!
All you’ll need is a tupperware or recycled glass jar. I use a Bonne Mamman jar when I don’t have scales to hand as they have patterns on the side and you can measure it by eye.
60g jumbo oats
1 tbsp chia seeds
1/2 tsp cinnamon
2 tsp peanut butter or other nut butter
150ml plant based milk
Fruit of your choice (we go for what is in season or what we can pick)
Optional extras: nutmeg, cacao, ginger, maple/date syrup, vanilla essence, chopped mixed nuts, seeds, dried fruit, or desiccated coconut.
- Pop your jar on the scales and weigh in your oats
- Add your chia seeds and cinnamon stirring thoroughly
- Add your dairy free milk and stir again – you may want to add slightly more milk depending on the consistency you like it
4. Spoon your nut butter into the mixture but don’t over mix as it’s nice to have chunks of it the next day rather than fully blended in
You can buy all items on the list loose/plastic free if you shop around so for that very reason this is one of our favourite breakfasts! Additionally as it’s vegan the environmental impact of the meal is lower than it would be with dairy milk.
