Easy peasy lemon drizzle cake

When life gives you lemons go and buy the rest of the ingredients to make this super easy vegan lemon drizzle cake! It’s super quick and easy to make and is a big crowd pleaser for vegans and dairy eaters alike.

What you’ll need
•  320g of self raising flour
•  230g of caster sugar
•  1 lemon
•  115ml of vegetable oil
•  200ml cold water
For the drizzle:
•  1 lemon
•  175g of icing sugar
•  Additional toppings can include lemon rind and lavender

What to do:

  • Preheat the oven to 170°C and grease a loaf tin with a little dairy free butter
  • Sift the flour into the bowl and thoroughly mix with the caster sugar, and baking powder
  • In a separate bowl measure out the vegetable oil and cold water
  • Add the wet mixture to the bowl of dry ingredients and add the lemon juice and zest (reserve half a teaspoon of zest if saving for decoration) stirring the mixture with a wooden spoon to combine but be careful not to over mix
  • Put the cake batter in your greased tin and put in the preheated oven for 25 minutes. Check on the cake after 20 minutes – test whether the cake is ready by sticking a cake tester or knife into the centre of the cake, if it’s ready the knife will come out clean
  • Allow the cake to cool in the tin for 10 minutes then turn out onto a cooling rack
  • Meanwhile sift the icing sugar into a bowl and one drop at a time add the lemon juice stirring thoroughly between each drop. It may seem a very slow process but otherwise the icing may run off your cake
  • Once the cake is completely cool spoon the icing over allowing it to run down the sides. At this stage you can sprinkle your lemon zest and lavender on top if using
  • Top Tips
    •  Only grate the top layer of the lemon rind! Turn the lemon after every grating as this stops you adding the white pith which has a bitter taste
    • To get the most juice out of your lemon using the palm of your hand roll it back and forth along the work surface with firm pressure as this helps to break down the lemon and you’ll get more juice!
